A Really Easy Rice Pudding Recipe

I don't cook.  Ever.  Unless grilled cheese counts?  Maybe that's why this blog post is such an accomplishment for me.  I actually made something!  And it was delicious!  If I can do it, so can you.  Here's what you need for a really yummy, creamy rice pudding:

  • 3 cups cooked rice
  • 3 cups milk
  • 2 tablespoons butter
  • 2/3 cup sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon 
Really Easy (& Delicious) Rice Pudding


Start with 3 cups of cooked rice.  I snagged some leftover rice from one of my mom's wonderful home-cooked dinners.


In a medium-sized pot (with heat set in the medium zone of the dial), mix together the rice, milk, butter, sugar, and vanilla.  


It takes about 25 minutes or so for most of the milk to be absorbed.  Stir!  Don't let a milky film cover the top - because that's just not yummy.  Is it true that a wooden spoon over the top of the pot helps it to not boil over?


When you're about ready to take the pot off the stove, stir in the cinnamon.  It smells so good!


Serve hot or store in the fridge and serve cold.  Either way, it's delicious.  Makes about 6 servings. Enjoy :)
